INGREDIENTS
  

  • 2 green plantains
  • 2 cups water (adjust based on desired
  • 2 cups coconut milk (fresh or canned)
  • Condensed milk: sweeten to taste
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon  or 1 stick
  • ½ tsp ground nutmeg

INSTRUCTIONS
 

  • Wash the Plantains: Wash the plantains to remove any dirt or debris.
  • Peel the Plantains: Peel the plantains by cutting off both ends with a paring knife, then make a shallow slit along the length of the skin. Use your fingers to remove the peel.
  • Cut the Plantains: Cut each peeled plantain into three equal pieces.
  • Blend the Plantains: In a blender, combine the plantain pieces, coconut milk, and nutmeg. Blend until smooth.
  • Boil the Water: In a pot, add the water, cinnamon, and salt. Bring to a boil over medium heat.
  • Add the Plantain Mixture: Once the water has boiled, pour in the plantain blend. Stir continuously to prevent lumps and ensure even cooking.
  • Cook the Porridge: As the porridge starts to thicken, reduce the heat to medium-low. Let it cook for about 5 to 10 minutes, stirring occasionally to prevent sticking.
  • Add the Vanilla: Stir in the vanilla extract.
  • Sweeten to Taste: Add condensed milk to sweeten the porridge to your liking.
  • Serve: Pour the Jamaican plantain porridge into bowls and serve.

NOTES

  • You can sweeten the porridge to your liking using condensed milk or both condensed milk and sugar.
