1 Lemon: Halved, seeds removed, and freshly squeezed
2 tablespoons honey: Adjust to taste
1 piece of ginger: Peeled and grated or chopped (optional but adds a nice zing)
Ice cubes: For serving
Cucumber: For garnish (optional)
INSTRUCTIONS
Prepare the Ingredients:
Wash the cucumbers.
Peel the cucumbers and chop them into smaller pieces to make blending easier.
Peel and grate or chop the ginger.
Wash the lemon, cut it in half, and squeeze out the juice (remove the seeds).
Prepare the honey.
Blend the Ingredients:
Place the chopped cucumbers into the blender.
Add the fresh lemon juice and honey. If using ginger, add the grated or chopped ginger at this stage.
Add the water to help with blending. Blend until the mixture is smooth.
Strain the Juice:
Pour the blended cucumber mixture through a fine mesh strainer into a large bowl. Use a spoon to press down and extract as much juice as possible. Discard the pulp.
Adjust the Consistency (optional):
Taste the juice and adjust the sweetness or lime juice according to your preference.
Chill and Serve:
Transfer the juice to a pitcher.
Refrigerate for at least 1 hour to chill (optional).
When ready to serve, pour the juice over ice cubes in glasses.
Garnish with cucumber slices if desired.
